Baked Chicken and Mushroom Rice




I love baked rice so i decided to make my own...with chicken, mushroom, vegetables and onion...:)

What do you need

  • 2 1/2 bowls of cooked rice
  • 100g of chicken (cut into cubes)
  • 50g of brown mushrooms (cut)
  • 1/2 onion or 1 small onion
  • small piece of green capsicum (diced)
  • 5 cherry tomatoes (cut into half)
  • 1/2 cup chicken stock
  • 1/2 cup low fat milk
  • 2 tsps corn flour (add to chicken stock)
  • shredded cheddar cheese
  • butter for frying
  • salt and pepper to taste
What to do
  •  add butter to hot pan, add onion and fry for 1 min.
  • add chicken, fry for another 2 mins.  Add mushroom and fry for another 2 mins.
  • add vegetables and fry for a while more.  Add pepper and salt.
  • add chicken stock, milk and stir till mixture is a bit thicken.
  • add rice.  By now, rice will absorb the stock and milk.
  • pour the rice mixture into a baking bowl.  Spread generous amount of shredded cheddar cheese on top of rice, covering it.
  • put the bowl into a preheat oven at 200 celcius and baked for 20 minutes.
  • serve hot.

Fried Brinjal with dried prawns






My aunty gave us some dried prawn which she bought from Taiwan.  It really taste very good and crunchy.  I decided to fry brinjal with it.

What you need

  • 1 long brinjal
  • minced garlic
  • soya sauce to taste
  • 2 teaspoons of dried prawns
  • oil for frying
How to do it
  • Cut the brinjal to around 1 cm thickness.
  • Add oil to frying pan and fry the brinjal till cooked.
  • Add garlic and soya sauce to taste.
  • Add dried prawns and mix well.
  • Ready to be served.

Singapore Fried Bee Hoon






What you need (Good for 2 pax)

  • 400g of bee hoon (soak for 1/2 hour, depending on brand)
  • RM3 worth of char siew (cut into bits)
  • 100g of prawn (shelled and deveiled)
  • taugeh (RM0.40)
  • 2 eggs
  • one small onion
  • 3 tablespoon of ketchup
  • soya sauce
  • water
  • oil
How to do
  • Break the egg in a bowl, mix and then pour into an oiled non-stick pan.  Spread well till egg is covered on whole pan.  Cook under low fire, carefully turning it to the other side without breaking the egg.  Set aside once cooked and cut into strips once it has cool down.
  • Add oil on the pan, add onion, prawn and fry till 80% cooked.  Add char siew and continue to fry.  Follow by taugeh.  Add water, ketchup, soya sauce
  • Add bee hoon and mix well.  Fry till bee hoon is well done.  
  • Add the egg strips and serve immediately.

Steam Tilapia with Chili Bean Sauce

Today's blog entry is steam fish.  A healthy way of eating fish.

What do we need
  • 500g Tilapia fish (cut into half, optional)
  • minced garlic and ginger
  • chili cut into small pieces
  • 1 teaspoon sugar
  • green onion and coriader leaves
  • 1 table spoon of chili sauce
 How to do
  • mix garlic,ginger, chili and fry with oil till fragrant.
  • add sauce and sugar to mixture and continue to fry.
  • pour mixture on fish and steam on boiling water for 10-15 mins.
  • spread green onion and coriader leaves on top and serve hot

Seoul Garden Korean BBQ @ One Utama

My husband and I went to celebrate our anniversary at Seoul Garden Korean BBQ at One Utama becoz we thought the food is nice but it turned out to be a disappointment.  The food was not fresh and not worth the money at all.  Plus the waiter at the payment counter had really bad manners.  No smile plus couldn't speak English well.  I couldn't understand him, asked him to repeat and he responded to me as if I am a child.  I just stared back at him and show my serious face.  I wanted to give him a piece of my mind but kept my cool.  Horrible service - foreign worker.  Won't recommend this place at all to go...:(

Wing Hiong Bak Kut Teh @ Jalan Yap Ah Shak

One of our favourite food is bak kut teh. Bought a Goupon coupon recently to eat at Wing Hiong Bak Kut Teh.  Initially we thought perhaps the portion is small just like the one restaurant we went to at Kota Damansara (already forgot name) but this turn out well and worth the money...and I recommend you try this restaurant:)

Rice with luncheon meat,fried egg,baked minced meat beans and fried vegetables

I'm in one of my moods to cook a simple dish which I remember I always like to eat at those "champ fan" store.  It's really simple...just fried the luncheon meat, egg, vegetables and stir fry minced meat with baked beans.  It's really more homecooked then to eat out.  I love it!

A Simple Home Cooked Dinner

Didn't quite know what to cook on a Saturday evening (a rest day) and then I remember the blog I read at My Little Space:My Simple Rice Cooker Chicken Rice

I had half a chicken so I decided to cook this recipe and it turned out so simple and delicious.  Served with cucumber slices, chinese parsley, fried egg with long beans and mixed vegetable soup (with fish cake). 
Oh and I serve with chicken rice chili...so delicious and satisfying...:)

Fried Roll Fish Paste

What you need
  • 500gms of fish paste
  • green onion (cut)
  • carrot (minced)
  • foo chok (unsalted, flat)
What to do
  • Mix fish paste with cut green onion and carrot
  • Spread out the foo chok (need to wipe with a clean wet cloth for it to soften)
  •  Spread the fish paste on the foo chok (evenly)
  • Roll up the foo chok
  • Add oil to a frying pan.  Fry the rolled foo chok on the heated pan (evenly).
  • Remove from pan and gently roll it on kitchen towel.  This is to take away any excess oil.
  • Once able, cut into pieces of 2cm each and serve with chili sauce.

Plum sauce Chicken Drummet

What You Need:
  • 8 pieces of chicken drummet
  • One sliced medium onion
  •  1 1/2 tbsp of plum sauce
  • corn flour for coating
  • 100ml of water
  • oil for cooking
  • 1 egg
Marinate
  • salt
  • pepper
What To Do:
  • Marinade the drummets for 30 minutes
  • Crack the egg in a bowl and mix with the marinated drummets.  
  • Coat with flour and fry in pan till golden brown.  Set aside.
  • Mix the plum sauce with water and one teaspoon of corn flour. 
  • In the same pan, fry onion slices.  Add in the plum sauce mixture.  Stir till a bit thicken.
  • Add chicken and coat it well with sauce.  Dish out and serve while it's hot.

Korean bim bim bap


We love Korean food.  We tried all kinds of Korean food and I try to pick up the recipe.  This dish is so easy to make...

Ingredients
  • 2 cups of cooked rice
  • shreded carrot
  • mushroom (cut in strips)
  • beans sprout
  • spinach
  • minced meat of your choice
  • toasted sesame seeds
  • fried egg
  • ko chu chang (Korean red pepper paste)
  • sesame oil
The Method
1.   Take turn to fry the shreded carrot, mushroom slices, bean sprout, spinach, meat separately seasoning with salt and pepper.  Set them aside on separate small plates.
2.   Scoop 2 spoons of cooked rice in a bowl.  Dish a spoonful of carrot, mushroom, bean sprout, spinach, meat on the rice side by side.  Don't mix them together yet.  
3.   Top it up with a fried egg, sesame seeds, sesame oil (desire taste) and ko chu chang.  
4.   Mix them together well and serve immediately.  You will love the taste.

Cantonese Fried Yee Mee


This is one of my favourite noddle dish.  I simply love it...
Ingredients
  • One pack of Canton Yee Me
  • 300grams of chicken fillet (cut into small cubes)
  • 50grams of fish cake
  • prawns (optional)
  • few stalks choy sum (clean and cut)
  • 3 cloves of garlic (minced)
  • 1 egg
  • 1 tbsp of soya sauce
  • 1 1/2 tbsp oyster sauce
  • 2 tsp of corn flour
  • 1 1/2 bowl of water
  • oil
  • salt
  • green onion (cut into 1 inch)
 Method
1.   Boil the Yee Me in half pot of boiling water for 1 1/2 minutes.  Drain water and set aside.
2.  Add oil to frying pan, add garlic, chicken and fry till chicken is half cook.  Add fish cakes slices and continue to fry for 2 minutes more.  Add choy sum and fry for another 2 minutes.
3.  Mix the corn flour and water, follow by soya sauce, oyster sauce and salt.  Add to the frying pan and mix with meat and vegetable till slightly thick.
4.  Crack an egg in a bowl, pour into pan and mix it well.
5.  Add the noodle and mix well.  Taste and add soya sauce if not tasty enough.
6.  Dish out and serve.

Pumpkin Fried Rice


I had some left over pumpkin and lot of rice so I decided to make pumpkin fried rice with green beans.  I usually I make pumpkin rice in the rice cooker but this is different.

Ingredients (prepares for 3 people)
  • 1/4 of pumpkin, cut into small cubes
  • 50g of green beans. Cut into small sizes
  • 100g of waxed pork sausage (cut into small cubes)
  • 3 bowls of cooked rice (best to use leftover rice)
  • 2 cloves of garlic (minced)
  • salt
  • pepper
  • soya sauce (1 tsp)
Method
1.   Add 1tbsp of oil into a pan.
2.    Stir fry the pumpkin till soft.  Set aside.
3.    Fry the garlic, followed by waxed pork sausage and green beans (add oil if needed) for 3-4 minutes.  Season with salt, pepper and soya sauce.
4.   Add pumpkin and rice and fry for another 4-5 minutes.  Taste and add salt if needed.  Serve.

Soya Chicken





This is also one of my favourite.  It's so nice especially with steamed rice.
Ingredients

  • half chicken
  • 5-6 cloves of garlic
  • 4 star anise
  • 1 small bowl of soya sauce
  • 1 tbsp dark thick soya sauce
  •  3 tbsp sugar
  • 1 small bowl of water
Method
1.   Marinade chicken with dark thick soya sauce.  Set aside.
2.   In a bowl pan, heat 1 tbsp of cooking oil.  Add garlic and star anise.  Stir fry till fragrant.
3.   Add the bowl of soya sauce and water and let it simmer in low fire for 20 minutes.
4.   Add the marinated chicken and let it simmer for another 20-30 minutes.  The chicken should be well covered in the soya sauce and water.  
5.  Add sugar to taste.
6.  After 30 minutes, use a chopstick to poke the chicken to see if it's cook.
7.  Let the chicken cool before cutting into bite sizes.  Serve with pounded chili sauce.

Fried Soya and sesame salmon






My husband and I saw some very fresh salmon strip at the supermarket and we bought it.  Since it was slice as a long and thin strip I wonder how I can cook it.  Then I came up with the following dish and it's so delicious.

Ingredients

  • 200gms of salmon strips 
  • 1/2 medium onion 
  • green onion 
  • 1 Tbsp soya sauce 
  • birds eye chili 
  • toasted sesame seeds
  • corn flour 
  • pepper 
  • salt

 Method
1.   Marinade salmon with salt and pepper.
2.   Coat with corn flour and fry in oil till golden brown (only takes 2-3 minutes). Set aside
3.   Mix 1tsp corn flour with water and soya sauce.  In the same frying pan, add onion and fry till fragrant.
4.   Pour in flour mixture and stir till sauce starts to thicken.  
5.   Combine fish to sauce, add green onion and sesame seeds. Mix well and serve immediately.

Steam Fish Roll




I got inspired by the post on Let's get wokking  so I decided to try to make my own.  I didn't like to buy the ready-made paste so I decided to make the fish paste on my own.  Experimented twice and it's much better this time...

Ingredients
Fish Paste
  • 1 medium size mackerel (deboned)
  • salt
  • pepper
  • water
  • diced carrots
  • diced green onion
Method
1. Scrap of all the fish meat and place in bowl.
2. Add salt and pepper.  
3. With a big knife (wet with water so that meat won't stick to it), chop the fish meat, flip over and over again till a paste is form.  
4. Mix with diced carrots and onion.  Set aside.

Egg roll
  • 3 large eggs
  • seedweed sheet
  • salt
  • pepper
  • oil
Method
1.  Break the eggs in a bowl.  Add salt and pepper to taste.
2.  In a non stick pan, add two table spoon of cooking oil.
3.  Pour in half of the egg mixture.  
4.  Swirl the pan to spread the egg.
5.  Remove the egg once cooked.  
6.  Repeat the same process with the remaining egg mixture.
7.  Place the egg crepe on a flat plate.  Spread a thin layer of the fish paste and roll.
8. Place the second egg crepe and the seedweed sheet on top.  Spread a thin layer of fish paste and roll.
9. Place both rolled egg on a steaming plate and let it steam over boiling water for 8 minutes.
10.  Remove, let it cool, cut into smaller pieces and serve with chili sauce.

Green salad mix


We love salad mix.  They are really healthy, helps in digestion and gives a good skin complexion.

Ingredients
  • Lettuce 
  • Cherry tomatoes 
  • Cucumber 
  • Carrot slices 
  • Green onion 
  • Lemon juice 
  • Olive oil 
  • Salt
 Method
1.  Wash and cut lettuce, cherry tomatoes, cucumber to desirable bite size.
2.  Mix all vegetables in a bowl.  Add olive oil, salt, lemon and green onion and mix.
3.  Serve.

Roast Lemon Wings


I have been trying to bake chicken wings and it turned out quite well this time...

Ingredients
  • 10 Mid joint chicken wings 
  • 1/2 medium onion 
  • 4 garlic cloves 
  • 1/2 lemon (squeeze juice) 
  • 2 table spoon of soya sauce 
  • sugar

Marinade
1.  Crush the onion, garlic and mix with juice, soya sauce and sugar.
2.  Mix with wings and marinade for at least 4 hours.  Best overnight.

Method
1.  Place the marinaded wings in a pre-heated oven of 200 celcius and roast for 40 minutes. 
2.  Serve immediately.

Fried Mushroom with potato & capsicum



White Beech Mushroom
I bought white beech mushroom or Bunapi from the supermarket and decided to cook it with onion, potato and capsicum and it turned out so delicious...you must try this. The mushroom is so tasty.

Ingredients
  • 1 packet of white beech mushroom (Bunapi) 
  • 1 medium potato (peeled and sliced diagonally) 
  • 1 medium onion 
  • 1 slice of green capsicum 
  • chinese parsley 
  • salt 
  • pepper
Method
1. Add oil to frying pan and then fry potato till golden brown.
2. Add onion, capsicum and fry for another 1 minute.
3. Add mushroom, pepper and salt to taste.
4. Stir fry for another 5 minutes and serve.

Hakka noddle



I love Hakka noddles. The ones I eat at the coffee shop is served with char siew and mixed with pork lard oil. It's not so healthy actually. So I decided my very own at home with chicken instead. And it turned out delicious:)
Ingredients
  • Hakka noddles (purchased ready made at the market) 
  • Chicken fillet slices 
  • Garlic (minced) 
  • soya sauce 
  • oyster sauce 
  • pepper 
  • salt 
  • oil
Method
1. Cut chicken fillet into strips/silces and place in boiled water. Let is boil for 5-10 minutes. Remove the chicken, set aside and keep the chicken broth for other use.
2. Fry the minced garlic in oil till golden brown. Set aside.
3. Blance the hakka noddles in boiling water for 2 minutes. Remove and then placed in cool water. Set aside.
4. Mix 1 tablespoon of soya sauce, 1/2 tablespoon of oyster sauce, dash of pepper and salt in a bowl.
5. Add the garlic oil, sauce to the noddle and mix thoroughly. Place the chicken strips and some green onion on top of the noddle and serve.

Sweet & Sour Pork



This is one of the easiest dish to make. My husband loves this dish.
Ingredients
  • 500g pork (not so lean)
  • one japanese cucumber (sliced side way) 
  • one capsicum (green or red, up to preference) 
  • one medium onion 
  • salt 
  • pepper 
  • corn flour 
  • tomato paste 
  • chili sauce (optional) 
  • 1 tea spoon of vinegar 
  • 1 egg 
  • cooking oil for frying 
  • sugar (optional)
Method
1. Cut the pork to reasonable chuck.
2. Marinade with salt and pepper for 1 - 2 hours or overnight.
3. Before frying, add one egg and then mix with corn flour.
4. Fry in oil till turns golden. Dish out and set aside.
5. In a small bowl mix water with one teaspoon of cornflour, tomato paste, vinegar and a bit of sugar (optional).
6. In the same frying pan, add onion, cucumber and capsicum. Fry for 2 - 3 minutes and then add the mixture. Stir till the sauce is thickened.
7. Add in the fried pork, mix well and then dish out and serve. Enjoy :)
