What do you need
- 2 1/2 bowls of cooked rice
- 100g of chicken (cut into cubes)
- 50g of brown mushrooms (cut)
- 1/2 onion or 1 small onion
- small piece of green capsicum (diced)
- 5 cherry tomatoes (cut into half)
- 1/2 cup chicken stock
- 1/2 cup low fat milk
- 2 tsps corn flour (add to chicken stock)
- shredded cheddar cheese
- butter for frying
- salt and pepper to taste
What to do
- add butter to hot pan, add onion and fry for 1 min.
- add chicken, fry for another 2 mins. Add mushroom and fry for another 2 mins.
- add vegetables and fry for a while more. Add pepper and salt.
- add chicken stock, milk and stir till mixture is a bit thicken.
- add rice. By now, rice will absorb the stock and milk.
- pour the rice mixture into a baking bowl. Spread generous amount of shredded cheddar cheese on top of rice, covering it.
- put the bowl into a preheat oven at 200 celcius and baked for 20 minutes.
- serve hot.
