Plum sauce Chicken Drummet

What You Need:
  • 8 pieces of chicken drummet
  • One sliced medium onion
  •  1 1/2 tbsp of plum sauce
  • corn flour for coating
  • 100ml of water
  • oil for cooking
  • 1 egg
Marinate
  • salt
  • pepper
What To Do:
  • Marinade the drummets for 30 minutes
  • Crack the egg in a bowl and mix with the marinated drummets.  
  • Coat with flour and fry in pan till golden brown.  Set aside.
  • Mix the plum sauce with water and one teaspoon of corn flour. 
  • In the same pan, fry onion slices.  Add in the plum sauce mixture.  Stir till a bit thicken.
  • Add chicken and coat it well with sauce.  Dish out and serve while it's hot.

Soya Chicken





This is also one of my favourite.  It's so nice especially with steamed rice.
Ingredients

  • half chicken
  • 5-6 cloves of garlic
  • 4 star anise
  • 1 small bowl of soya sauce
  • 1 tbsp dark thick soya sauce
  •  3 tbsp sugar
  • 1 small bowl of water
Method
1.   Marinade chicken with dark thick soya sauce.  Set aside.
2.   In a bowl pan, heat 1 tbsp of cooking oil.  Add garlic and star anise.  Stir fry till fragrant.
3.   Add the bowl of soya sauce and water and let it simmer in low fire for 20 minutes.
4.   Add the marinated chicken and let it simmer for another 20-30 minutes.  The chicken should be well covered in the soya sauce and water.  
5.  Add sugar to taste.
6.  After 30 minutes, use a chopstick to poke the chicken to see if it's cook.
7.  Let the chicken cool before cutting into bite sizes.  Serve with pounded chili sauce.

Roast Lemon Wings


I have been trying to bake chicken wings and it turned out quite well this time...

Ingredients
  • 10 Mid joint chicken wings 
  • 1/2 medium onion 
  • 4 garlic cloves 
  • 1/2 lemon (squeeze juice) 
  • 2 table spoon of soya sauce 
  • sugar

Marinade
1.  Crush the onion, garlic and mix with juice, soya sauce and sugar.
2.  Mix with wings and marinade for at least 4 hours.  Best overnight.

Method
1.  Place the marinaded wings in a pre-heated oven of 200 celcius and roast for 40 minutes. 
2.  Serve immediately.
